Authentic, Fresh and Delicious
FIESTA! Modern Mexican Cuisine offers the most authentic and freshest Mexican food I have ever tasted– period. Come to find, there is a special reason for that. Roger Aguirre, co-owner/general manager/head chef for FIESTA! has been cooking authentic Mexican food since he was a child.
“I grew up cooking with my mother, Julia, in Mexico,” Aguirre says. “We had six children in our family and I helped my mother cook and learned how to prepare all of the recipes with fresh ingredients. I started cooking in restaurants when I was 13.”
FIESTA! Modern Mexican Cuisine is located in the Hilltown Shopping Center; don’t let the exterior fool you into missing out an amazing and upscale dining experience. It has been said “it is what’s on the inside that counts.” Be sure to make your way inside FIESTA! and prepare to be impressed.
When you enter FIESTA! you will appreciate the relaxing ambiance provided by low lighting and soft music. Parchment paper pendant lights provide a soft glow over comfortably cushioned booths; the surrounding décor is modern and sleek with stone, hardwoods and a neutral color palette.
As soon as we were seated we were met with a warm smile, multicolored chips and fresh, flavorful salsa. FIESTA! prepares fresh tortilla chips, daily.
“The chips come to us raw and we cook them fresh each day,” Aguirre says. “We make our own salsa every day, roasting the tomatoes and adding the other ingredients—all fresh.” Their salsa is delicious and has just the right amount of kick to it. It won’t make your brow sweat but it keeps your taste buds interested.
FIESTA! offers all of your traditional favorite Mexican dishes—burritos, enchiladas, chimichangas, quesadillas, fajitas –and for the more adventurous diner, a variety of original dishes, created by Roger, have modern twists in the recipes.
“We are going to be adding four new, original dishes to the menu (so new they are not even not named yet), my creations, I want everyone to come in and try something new,” says Aguirre. “I love food and I love cooking and coming up with new recipes and combinations.”
Delicious soups, creative salads and hardy appetizers are also served. One thing that all of the dishes have in common is that they are all prepared daily with the freshest ingredients that are often purchased from local vendors. You can literally taste the difference fresh vegetables and herbs make and that makes FIESTA! unique.
A favorite of many patrons is the Alambres –grilled steak, poblano pepper, bacon, pineapple, Chihuahua cheese, cilantro and onions served on 4 tortillas—are also called “Street Tacos.” These were almost too pretty to eat and the meat was melt-in- your- mouth tender.
The steak and chicken is always double-marinated and so very tender and juicy. Further proof of that process was the scrumptious chicken that was in our Pollo Poblano; the poblano peppers were the greenest ones I have ever seen.
FIESTA!’s cuisine is presented on gorgeous melon colored plates; the flatware is very substantial and hammered stainless steel. FIESTA!’s delicious food served on quality dinnerware is worthy of a celebration.
In order to celebrate, I ordered a Mango Daiquiri. It was most enjoyable and refreshing—and large. Speaking of drinks, FIESTA! is rumored to have the best Margaritas in town; they also serve a “Skinny Margarita.” FIESTA! serves top shelf liquors, domestic and imported beers and over 30 types of tequilla. A great time to visit FIESTA! to celebrate for yourself is during their Happy Hours, every Monday-Thursday from 3-7 p.m., when they offer drink specials.
